Following current trends (and banner rules), Fortnite’s Item Shop resets every day at 00:00 UTC (or 12 AM UTC). This is assuming that there are no fluctuations in the schedule – as often seen due to the release of event specific, limited-time only bundles (such as the Deadpool Item Shop).
